People are your biggest cost — typically 40-60% of operating expenses. You'll learn time-to-hire (can you fill roles quickly?), cost-per-hire (are your recruitment channels expensive?), revenue per employee (are they generating enough output to justify their cost?), and employee turnover rate (are you losing people faster than you should?). You'll also understand employee utilization rate (for service businesses, are people billable or sitting idle?) and eNPS (employee net promoter score — would your team recommend your company to friends?)
