Key restaurant metrics#
The Restaurant Dashboard shows the metrics that matter: covers (guests served), revenue per cover, average table turnaround time, food cost percentage, labour cost percentage, and waste-to-revenue ratio. These update in real time during service. The Daily Brief summarises yesterday's performance with highlights and areas for attention โ for example covers were up 12% but food cost rose to 34%.
Sales by item and category#
The Item Performance report shows every menu item ranked by revenue, quantity sold, and margin. Identify your stars โ high volume, high margin โ and your dogs โ low volume, low margin. Use this to make menu engineering decisions: promote stars, reprice or remove dogs, and investigate items that sell well but have thin margins.
